01 / GrindEighteen grams of washed Ethiopian beans, ground fresh and medium-fine, the size of sea salt. Nothing is pre-ground in this house.

02 / PourWater at 93 degrees, poured in slow spirals. A thirty-second bloom lets the coffee breathe before the main pour begins.

03 / SipJasmine, ripe peach and a clean, sweet finish. Wait a minute while it cools; that is when the cup opens up.
